Hi there, my name is Martin and I own and operate Red Gum BBQ. Red Gum BBQ makes great, simple food at its heart. Using a custom made Texas Offset smoker, Red Gum BBQ slow smokes pork and beef cuts for up to 16 hours until tender, moist and full of flavour. At Emu Plains we offer our awesome pulled pork and beef brisket rolls and often something else that's caught my attention for the moment. Red Gum BBQ honours and embodies the traditions of its Southern-style BBQ heritage while connecting to its Australian identity through its exclusive use of native Australian Red Gum BBQ has made a commitment to exclusively using free range or ethically farmed meats in its menu. Not only does this satisfy the animal lovers in us but we believe it creates the best quality product for our customers.
When did you know you first wanted to be in the food industry?
My wife is American and we have often sat around having a coffee discussing all the wonderful food we would like to bring to Australia. I love to BBQ and decided 2 years ago to take my passion for food and build a business that brings the food that we love from the States to our new home.
What inspires you to cook?
My wife inspires me to cook. I love to make things that she had growing up and loved. And I love cooking and sharing these things with family and friends. Seeing people tuck into my food and the joy the get from eating it, is what inspires me to keep on cooking.
Describe your perfect day...
My perfect day is spent with my son doing anything.
What is your best ever culinary creation?
My best culinary creation is my beef brisket roll, learning to cook a brisket to perfection and consistently has been my biggest BBQ challenge and my biggest triumph.
Describe a lesson you learnt from a cooking failure...
Practice makes perfect.
What's the scariest movie you have ever seen?
I don't watch scary movies, I am too scared to. Seriously, ask my wife.
What's your favourite childhood book?
I don't have a favourite childhood book but I love anything by Neil Gaiman.
What's the best advice anyone ever gave you?
Keep it simple, create a process. Lessons to live by.
What's your favourite tunes to get you in the cooking mood?
I have been listening to loads of Melbourne bluegrass recently whilst researching bands for events. Nothing like great BBQ and Bluegrass. ** Thanks so much Martin for the insight in the Red Gum BBQ life!
